OCD Apricot Cranberry Goodness

Despite my attempts at healthy denial, I'm beginning to admit that this winter is wearing me down. I could make a list of all the frustrations, be it health problems (human & canine), death in the family, snow & icicles, heartbreak on the nightly news**, blah blah 'effing' blah....*sigh*. Enough!
Now for something good....something very, very good!!......


I first made this for our Christmas dinner in 2007--it's deceptively simple. It used to have some other boring, ho-hum name which, I suppose, described it in a rudimentary way. Well, that was hardly doing it justice, because once you have this stuff, you will become obsessively compulsive about eating it, slice by delicious slice, until it is gone. If you are so naive as to have it sitting on your kitchen counter, you will not be able to walk past it without picking up that bread knife and cutting yourself a slice. You may even find yourself compelled to smear some butter on top of it. Don't say I didn't warn you!
So here it is:

OCD Apricot Cranberry Bread

1/2 cup butter
3/4 cup sugar
2 teaspoons grated orange peel
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs
1 3/4 cups flour
1/2 cup milk
1 cup dried cranberries
1/2 cup dried apricots, diced
1/2 cup pecans, chopped (or walnuts or slivered almonds)

Cream together butter, sugar, peel, salt, baking powder & spices until well blended. Beat in eggs one at a time, beating until fluffy after each addition.
Stir in flour, then slowly add the milk, then gently mix in the cranberries, apricots & nuts.
Spoon the batter into a greased loaf pan. Bake at 350 degrees for 50-55 minutes or until it looks done (you know what I mean). Remove from oven & cool in pan for about 10 minutes, then remove & cool on a wire rack. Cut yourself a slice & think about how incredibly lucky you are!
